RECIPE-Curried Chicken with vegetables & raisins

Serves 4

Ingredients:

4 chicken breasts, trim fat, no skin or bones-cut into large bite pieces

asparagus-top half cut in 1” pieces

¼ cup raisins

1 small sweet onion-cut in 1” pieces

1 clove garlic thinly sliced

½ cup mushrooms cut into 1 " pieces-your choice (white, portobello or shitake)

curry powder, salt, pepper, cayenne

pepper-use according to your taste




Directions

Cut up the chicken into large bite size pieces, sprinkle with salt & pepper

Then toss and coat with curry powder







Turn stove on high using a small amount of olive oil - I use this olive oil – a gift from my niece. It is infused with herbs and adds a special taste to every dish! Brown chicken, add onions & garlic, then asparagus. Stirring constantly. Then add mushrooms & raisins and finally cayenne pepper.

Serve with cold cucumber & tomato salad

with sweet chopped lettuce, a bit of red onion and a light dressing. Or a watermelon & feta cheese salad, cut into small bite size pieces, add a bit of chopped mint with champagne vinegar dressing. Pair with a tasty white wine-I prefer a Sauvignon Blanc from the Marlborough region, or a nice Chardonnay.
